This recipe can totally be used for the Clean Eating Phase of my FAT LOSS GAME PLAN.
As usual, I don't recommend following my exact "recipe." This soup is super (pun intended;) adjustable. So have fun experimenting with different veggies and spices. Below is a list of the ingredients I used, with the step-by-step preparation in the video below:
3 lbs. skinless boneless chicken breast (chopped in 1 inch cubes)
2 cups mushrooms (chopped)
4 cloves garlic (chopped)
1 onion (chopped)
4 stalks celery (chopped)
2 carrots (chopped)
1 butternut squash (peeled & cubed)
½ head green cabbage (chopped)
2 cans diced tomatoes
48 oz chicken stock (plus 12-24 oz more depending on volume of veggies)
1 bunch watercress
butter
EVOO
garlic powder
onion powder
smoked Spanish paprika
soy sauce
For serving: fresh cilantro and grated Parmesan cheese
Not only will this recipe help you stay healthy during this crazy time, but it makes a TON of food. So you will have plenty for your weekly meal prep but also some leftovers to freeze for future food stores.
